½ cup rolled oats

1 teaspoon honey (optional)
Method
- Combine the oats, milk, yoghurt, chia seeds and cinnamon in a jar or container.
- Stir well and refrigerate overnight.
- In the morning, top with berries and drizzle with honey if desired.

Method
Preheat the oven to 180°C.
Lightly cook the onion, capsicum and zucchini in a non-stick frying pan until softened.
Add the spinach and cook until wilted.
Whisk together the eggs and milk, then stir through the vegetables, cheese and parsley.
Pour into a greased baking dish or ovenproof frying pan.
Bake for 25–30 minutes until golden and set.
